I love to garden and grow zucchini! These zucchini disks are one of my favorite things to make as a snack, a side dish, or sometimes just the entire meal.
They’re so delicious and seriously so easy to make!
It helps to use zucchini picked at a medium size. Too small and you won’t get as much bang for your buck. Too big and you’ll have too many large seeds inside.
Slice the zucchini into disks about this size.
Then lay the disks in a baking dish.
Sprinkle with your favorite seasoning. I used a salt-free garlic and herb seasoning blend this time around but you can use whatever you like.
Finish each disk with a healthy amount of shredded parmesan.
(‘Shredded’ is different than ‘grated’ and you’ll get a way different result. You want the cheese to be ‘shredded’.)
Bake at 350 for at least 25-30 minutes until the cheese is melted, bubbling, and lightly browned. Cheese will be melted and zucchini will be tender. Then enjoy!
