It's been cold hot and come

But this weekend this week,

You know, these graduation parties, you kind of hope it.

And then, you know, I was looking ahead.
I talked to Brittany on Monday, but, you know, Tuesday, you know, Big Malt's playing at that park across the street.
You know, I hope you're coming to that.
But, you know, but the forecast was rain, like 70% rain.

So I'm like, are they going to call it off?
Or might they reschedule?
They're like, we're busy all summer.
There's
no rescheduling.

So anyway, but it looks like it's going to taper up.
As long as it's gonna be 81, which is good.
Yeah, so all right, but anyway, this is cold these next couple days
I remember we had Dom's graduation party and the night before it was the worst storm I've ever seen blow through I mean like I said, it was like the old movie twister when neighbor stuff was just flying through the air through your yard or I lived like on Grace Hill or where that that wind would just come up It was incredible.
It was like build
momentum.

Well, I mean you could see it just build as it would come up now and
And then the next day, it was 96.

Thank God we had one of those big tents.

So they were replanting pine trees.

You'd have this like spade type thing and you'd just, you know, stuff it in like that and just pull it back and you'd
put in the
thing and then stomp it down.
We planted like thousands
of them.
No, this is going to be eight.

That I looked, I measured between the trees.
It's going to work.
I think that's going to be like, I don't know if this works.
I'm not going to try it for three, four, five years.
If it doesn't work, I'll take them all.
But I just think that's because, you know, like your grandpa.
You want something cool at your house versus, you know.

The other three I'm competing with.

They did two of these orchards in Bellevue.
All I'm saying, Jim, is... The trees were like 150 bucks, but I'm gonna get a better deal.

You know, you can go buy some, you know, little seeds to
grow your
vegetables.
If they die, they die.
Big deal, you buy another pack of seeds.
When you're putting in that kind of money, I would have somebody that really has it down to a science when to water, how much to water.

get the tree so in two years it's it's good yeah I would rather spend a little bit more money get the mature tree yeah we went to pickles and bags

I don't do math I don't do the hard stuff I do the easy stuff like medical so
that's that's before running even became a
Before running was really cool.
Before jogging, it was really cool guys.
Well actually, he goes back to, you know, Anchorman.
Yes, my wife and I are gonna try something.
It's called jogging, I believe.
I believe it's a soft J. You know, I mean, there was no such thing as jogging.
Yeah,

Yeah, it was a kickoff to our hospital, the new cardiac center that we had at the hospital.
George Kerwin had a dream, a vision.
And he brought in a couple.
He
knew something special.
There's a guy there.
What you talk about, yeah.
George's top notch class that guy.
give you the shirt off his back kind of a person.
He's
a wonderful guy.
What a great story too.
I mean, well educated, but he really didn't start at the top there.
George worked his way
all the way
from the hospital system all the way through and became the top dog at
the hospital
and very well respected for it.
But was so big into people getting out and moving.
Well, George was a good example.
He ran that thing,
what?
He went
out and moved.
20 years, 25
years.
Yeah, whatever the number is,
exactly.
Yeah, it's a long time.
But what's cool about the bell and we were talking about that is there's
It's this is the 49th running of the bell and and you have 20 guys You said there are other women in their tours 20 legends 20 like 20
legends at this time that have run every
one of
49 Bell and runs
That's incredible.
So the oldest right now would be what seven in 70s
all of that right?
Would that be interesting to compare his vitals?
to the guy that didn't.
I mean, that's it.
To mine?
Oh man, you get your great shape.
You walk in and I'm like, okay, another bell and guy.
So this exciting and 49 years, you got it down, but it's grown.
You've got different heats now, but you still do a great family thing with the parks and it's a great, it's more than a run.
I mean, that's a festival.
It really is.
It is a community event and the support we get from the community is why we have
49 years
of
successful runs, right?
It starts with our community, it starts with our hospital system, supporting what we do, supporting that vision of getting feet on the street, getting people out there getting healthy, that's really the biggest thing for us.
But if you didn't have those people handing out cups of water and don't, you wouldn't have the
runs.
Our volunteers, our corner volunteers, our, you know, race pack of volunteers, you name it, exactly.
You hit that nail on the head, John.
It really is a community event and we don't do it without...
It's the support from everybody.
We're here to talk about the medical team, but I've got 100 medical volunteers.
We don't do this without those people.
We don't do it without the 2000 plus volunteers standing on a corner somewhere telling people which way to go and which cars can't go which direction.
Or I know this for a fact with some of those hot days pulling people off the course.
We've had a few of those.
We've had a few of those.
trying to hone that process in and how to help people avoid those situations.
I know a
guy that happened to.
And at first, he was offended.
And then he realized, I didn't even saw pictures of himself.
And it's like, holy crap, I didn't realize it.
I thought, well, I got through this.
But you guys really, some of your volunteers really look for signs of, hey.
Yeah.
We have our medical team.
some of our volunteers as well, but our medical team is on bikes, right?
Cruising the course, you know, looking for those, those participants that are maybe struggling, whatever, um, our aid stations as they're, they're spaced out around the course.
They're looking for those people to go, okay, uh, bib number one, two, three, four looks rough and they'll radio that through to the next stations.
Hey, the, the guy in the red shirt and you know, bib number one, two, three, four, he looks a little tough.
That's exactly.
And he's like, wow, I didn't realize it.
You know, I just thought I'll gut this out.
I'll tell you one quick funny story.
One of the times I was covering it, they'd have that pickup truck for the media so you could video.
Yeah.
And they were going and some kid was like driving or whatever.
I remember.
And the one guy in the lead starts yelling and somebody's people like, what's he yelling?
That's what he said.
He's yelling.
Speed up.
The truck was going too slow for him.
So I'll tag along with that story.
I drove the truck one year.
It may have been me, right?
Yeah.
No, I drove the truck one year.
You know, as part of my medical team, I wanted to see what the course looked like.
I wanted to be out there, wanted to see what that looked like, you know, with the elites behind me.
And I'm pacing it and my spotters in the seat next to me.
And I'm looking at my speedometer.
It's 15, 16 miles an hour, 17 miles an hour.
And he's
going.
Pick it up.
They're making a move.
Pick it up.
They're making a move.
Exactly.
That's exactly right.
So I
hammered and I'm like, it was 16, 17, 18 miles an hour.
And
I'm
like, these guys are
catching me.
And you're riding in the back of a truck and you feel like you're going fast.
And these guys are right on you.
Yeah.
Yeah.
That was incredible.
That really showed those elite people how fast they run.
They're pretty darn good.
But the medical team, it's not going to, the heat won't be an issue this year.
But what are the things you,
Most common out of the yeah, so we
we our medical team prepares for the worst pray for the best and hope for something in between
you had all Levels haven't your few years goes beyond belief hot and humid.
We really have and we so we put in our medical tent We have dunk tanks the best way to cool somebody is a full immersion so we get a
core body temperature on them, and then we cool them as quickly as we can by putting them in a cold water bath, basically.
We actually had a gentleman, speaking of funny stories or scary stories, it might be, gentlemen stopped Randy Van Stratten in the hospital a year or so ago, Randy told me this story, and he said, hey, you don't know me, but your medical team saved my life.
Wow.
And Randy's like, you know, kind of taken back.
He goes, really?
What happened?
He goes, well, I had a heat stroke.
I was unconscious.
Your team wheeled me in.
put me in the dunk tank, and I walked home with my family that day.
Wow.
Yeah.
So that's the type of stuff that, you know, like you said, we'll do everything from...
What are they?
Explain the silver, like, blankets that you give people.
So the Mylar blankets are obviously a very thin space blanket,
if you
will, right?
So it's a heat retaining blanket.
People get chilled as soon as they stop running.
Right.
Okay, so in a day like tomorrow, we might see a few more of those heat, or they're done Saturday, excuse me, we might see a few more of those Mylar blankets going out because it's going to be cool and rainy and everything else.
Your body temperature is up really high when you're out
there
running and you're moving around and all of a sudden you stop right away.
It just helps retain that heat is more than anything.
I didn't, I didn't know that,
but I can use a
calcium, right?
A roll of them.
you know, we can put $10,000
on a roll.
Right.
But what I do know about them, they look really cool in the picture.
Absolutely.
They do.
You're silver cape.
Yeah.
I don't know if I need it.
I didn't know it was for heat.
I'm just giving you one of those.

How about we'll talk a little bit about preparing for it.
And then the Bellin, you know, it's 6.2 miles.
It's not a forever.
It's not a marathon, but still it's

It's a lot of people's
marathon.
It is.

It's that
person who's going from couch to 5k, couch
to 10k.
You do go to trade, but little things, twisted ankles, does that stuff happen there?
We see quite a bit of
that.
Yeah.
I mean, orthopedic injuries, blisters, you know, the little minor things, cuts, boo-boos, nicks and, you know, scrapes and things like that.
We see a lot of that.
we see hamstring strains and hip problems.
So a lot of that orthopedic stuff we see and we manage those things many times on course or after the race, maybe they can gut it through and finish out the event.
But I always recommend those people, don't make it your PR today if you're having symptoms.

Jim, how many years did you run it?
Oh, not enough.
Um, I'd not, six, seven, eight, nine.
Oh, that's a lot.
But it was really fun.
And, you know, and it wasn't, you got to train out when you're our age,
It wasn't that much training, maybe, you know, a week.
Now you have to train, you know, a couple months, and now Johnny and I got trained like a couple years.
But it's just so much... I just like the spaghetti dinner.
I like...
Going with my kid, I like the family part of it, the music, the event after and all the kids, the little kids got, all their bibs were number one.
So there was no, you know what
I mean?
I thought it was just, you got like cool stuff over there.
Do
you still have the
half bananas at the end?
We
still have bananas at the end.
I mean, you can't have a race without bananas.
No.
God
no, so, all right.
And in terms of, I mean, you're the medical guy for the whole thing.
You see, you have a hundred.
of you guys there
yeah there's a hundred volunteers medical volunteers in our first aid tents out on the bikes everything else and then add in our green bay fire team you know we're right yeah we got quite a few folks running around
Roland has that changed you know you've been doing this for 49 years but did they always submerge people in that no that's that's
fairly well not
Fairly knew
it When that became a big thing in like professional sports when Corey Stringer for the Minnesota Vikings exactly it died of heat Exhaustion and then and every NFL team from them and college football That's exactly when they started doing the big for lack of better words dunk tank type things
correct And that's exactly it John the the Corey Stringer associate Corey Stringer Institute and the National Athletic Training Association
my organization that I work with and work under, that's really where the big push came and the research came with, hey, this saves lives.
This saves lives, right?
And cool first transport second mentality has actually even, you've seen it just recently in the news, some of the fire stations out west and in California, you're like, oh, we're doing dunk tanks and this is new information.
Dude, we've been doing this
for
20 years,
you know.
So it's really cool to be able to do that.
I was lucky enough to work with the Green Bay Fire Department many, many years ago now already and bring that information and bring that research to them and say, hey, this, this saves lives.
And I had, I had descendants going, no, man, you put somebody in a dunk taker to kill them.
You give them a heart attack, you give this, you give that, whatever.
And the research just didn't show that.
And it showed obviously the opposite.
The quickest
way to lower that body free from like a lethal.
to at least get it down below that line,
right?
Your body is cooking from the inside out at that point, so we have to get you cool.
You'd
have to take a drastic measure.
Correct.
The advancement, I mean, that's changed.
I mean, the Superman capes weren't there 49 years ago.
Correct.
And to keep your, you said to warm your body, right?
Because it's chilled, that's the reason for those.
But some of this stuff is...
49 years, like the half bananas.
I mean, some of this stuff is traditional, right?
Yeah, absolutely.
So we've got a lot of really cool changes, you know, and we, every year you think, oh, it's medical, it's medical, medical.
You don't do anything different in medical, right?
You treat the people the same.
We don't.
Every year we look for advancements.
This year we brought in hands-only CPR.
So we're offering an opportunity for volunteers, spectators, you name it, to participate in our medical team as a medical volunteer.
by recognizing sudden cardiac arrest on the street.
I was going to ask you, because Mark Houston brought in the, I can never remember the name of them, the small units.
The ADs.
Yes.
Yeah.
And anybody can use them.
I mean, it talks, it talks right through it.
How do you guys distribute those throughout a course?
So we have, as I said, we have athletic trainers on bikes.
Right.
Our Green Bay Medical.
guys are on bikes as well.
We have firefighters on bikes.
They are all carrying backpacks with AEDs in them.
Got it.
All of our aid stations have AEDs at them as well.
Got it.
So we have an opportunity to get them out to the facilities right away.
Because really, if something happened, what is a time span?
What's that golden time
or whatever they call it?
So gold standard from if you look at sudden cardiac arrest in that in that it regards, if you look at sudden cardiac arrest, gold standard.
to get hands on chest to start CPR.
Gold standard is one minute.
Well, we certainly can't accomplish that with our bikes,
right?
It's gonna take us a minute to get that call to our incident command center, us to dispatch out that individual to that location.
So that's where our volunteers are so important.
That's why we're doing the hands only CPR training.
We want our volunteers to recognize, boy, if somebody falls down in front of me, it looks like they're not breathing.
It looks like they're pulseless.

I should start CPR.
I should start hands-only CPR for this victim.
And I can help save a life as a volunteer, as a spectator.
Interesting.
Wow.
That's why we're pushing this right this year.
We'll have opportunities for our community members, our volunteers, spectators, our runners to learn hands-only CPR at our expo tonight.
So that's fantastic.
So we're teaching it.
That is awesome.
Yeah.
One of the things that we, again, looking for enhancements every single year to our medical team, to our medical program.
This is one of the things that we brought in this year as an enhancement to it.
Very
cool.
They learned that this weekend.
You can literally learn hands only CPR.
It's a minute 47 second video and probably two or three minutes of practice.
No kidding.
Under five minutes, you can learn how to save a life.
And you just do that.
until you guys show
up.
And so one of us shows up with an AD.
That could
be another two, three minutes.
That's
correct.
And that can make the difference.
Your steps for sudden cardiac arrest, when you witness a sudden cardiac arrest or when you witness a collapse, you're not sure what it is even.
You can start CPR.
It's OK.
It's safe to do that.
It's not going to hurt them.
It's not going to hurt them, right?
If you're not sure what their breathing level is,
They're not breathing good enough for me, and we should start CPR in that situation.
This is great information, Rowan.

This is such a great event here in Green Bay.
Just the honor of the military that fun into our football game at the, at the rush at the arena.
Um, and you're going to really enhance that with this.
Military appreciate a right date
Yeah, so I mean one we're super excited to just be back in the Green Bay community It you know folks up there is just phenomenal.
They love the military.
They love music and You know what better?
Organization to bring up there than operation song.
It's just it's powerful and Just a great addition to a military appreciation night for sure We're we're so thankful to Green Bay Blizzard and and everybody out there
And Mike, for those that don't understand or don't realize what Operation Song is, could you go ahead and give us a thumbnail sketch one more time?
What exactly you guys do?
Absolutely, yeah.
So we're a nonprofit that pairs professional songwriters with veterans and their families to tell their stories.
Since 2012, we have written around 2,050 songs with veterans from World War II all the way up to post 9-11.
and including their family members.
We understand that family members serve just as much as the veterans did, and so we want to honor all of them and tell their stories through song.
2000, did you say?
2050, yeah.
And you guys haven't been around that long.
It's not like you've been around for 30 years.
Yeah.
Well, I mean, for a nonprofit doing what we do, we consider getting past 10 years of success.
Yeah.
But yeah, it's been incredible and it just keeps growing.
And so we're so proud of what we do and grateful just to be able to have the chance to bring it into a community like Green Bay.
Can you describe the process, Mike, if somebody wanted to have one of their family members or friend or whomever veteran, if they want to take part in something like this, could you tell the process, please?
Yeah, so the process is if we have a lot of opportunities for veterans and their families to write.
you know the the easiest way is to reach out to us through the website and we can write virtually with anybody across the country so it's it's after after we receive your in-processing application we pair you with a songwriter and you guys
Coordinate when you want to meet and and for how long and they sit down and just work out the song together When I say together, I mean we consider the participant a songwriter It's not our job to write the song for them.
It's it's our job to write the song with them We want them to be an active participant
and it's amazing what you capture in that interview and sometimes those interviews really all that long and they come out with some unbelievable just heartfelt
I don't know, I've just, I've listened to a number of your songs and it's terrific what you do there.
And yeah, it's just, that's a great- Well, they're perfect.
I mean, these-
Well, the musicians
are-
Yeah, the musicians and the writers, I mean, these people make a living writing songs, right, Mike?
Yeah, I mean they do.
So these are all professional songwriters that work here in Nashville and we have a lot in Texas as well.
And during the week they're writing two or three songs a day for the industry and we're just grateful to be able to have them.
participate with us and use their skill and talent to help us tell our stories.
It is incredible.
It's a process that could take anywhere from an hour to three hours.
And when I went through it myself, my song was actually written in a span of about 45 minutes.
So it's pretty incredible.
That's cool, man.
And we've been privileged to hear a few of those songs.

Absolutely.
What you capture is, and of course you got the professional musician in an unbelievable story.
Mike, can you tell us about the song we're gonna kind of preview here today on the show?
Yeah, so the song is called Love Never Dies, and we wrote this last year at our October show in Green Bay with Kathy Trinkler and Taylor Davis was the songwriter.
And Kathy wanted to write this song for her mom about her dad.
Uh, her dad was a veteran.
He had passed away and she wanted to surprise her mom with this song and that's just such a beautiful tribute.
She did such a great job and Taylor really captured.
I think what Kathy wanted to say, uh, and to see the, see the face, you know, her mom's face at the show, uh, when she surprised her with this song, it was just priceless.
Was her dad,
was her dad Gordon?
Uh, you know, I don't know her dad's name because he's in my, one of my books that I wrote on World War two veterans, tremendous guy.
Oh, that's awesome.
Yeah.
Awesome.

But he made her promise she wouldn't
even on the rainy days you got somebody to help you get on through over six years they built a lot
and a couple scars, some that couldn't be seen.
And that baby was growing up real fast and soon came two and three.
It was church every Sunday, dinners at five and summers out on the lake.
A lot of hard work and sacrifice and doing whatever it takes.
Cause love never dies, it never fades, even on.
We got somebody to help you get on through.
Over six years they built...
fire still burned hot up until the end when it was his time to go cuz love never dies it never fades even on the rainy days he got somebody
That's

You know, I wish it was.
That's actually that's actually Taylor Davis singing.
He's the songwriter that wrote with with Kathy.
I mean, that if somebody played that on a country station, you would have no idea it was a local type of song about somebody.
I mean, that had every bit of Nashville, any type of song that would be mainstream.
That was fantastic.
The professionalism and the quality is incredible.

Yeah, that's that's one thing we proud ourselves on is you know when we tell these stories We want to not only tell the story in a way that makes the veteran or the family member proud and honors them But is it you know is professional and good quality as well.
And so we take pride in that
Wow, what I like about that is that I mentioned I was specifically for the person that did the interview but
That could transcend to a whole lot of families what you talked about in there 60 years and you know
That was an amazing tune I have tears in my eyes.

There's so many songs that we have I mean my song was
was about myself and my son.
I was retiring as my son was joining the army.
And every time that song is played, somebody always comes up and says, man, that's me and my dad's song.
That's me and my son's song.

It's a beautiful day in Green Bay.
What's the
secret of getting this crust so good?
Actually, we go on every day early morning.
We make it fresh.
But then with
the grilling part, give us some secrets on grilling it so you don't burn it or so it's not too raw.
Sure.
I like to proof my crust.
So a lot of times you're going to leave your pizza in the refrigerator to keep your toppings all nice and fresh.
But you're going to want to pull that out and let it actually come to room temperature for about an hour.
And then you're going to want to put it into the oven or onto the grill.
It has a different flavor.
Doesn't it, Jim?
Yeah, absolutely.
I've never
had smoked pizza.
And I
love your pizza.
Excellent.
The charcoal really does make a big difference.
I've heard people are getting more creative with their smokers.
But I'm a little old fashioned.
I like to sit out in my lawn chair, enjoy a drink, and grill out.
But you put that even on,
I have gas grill, but you put those wood chips in there.
That gives it that smoke
flavor.
So I'm going to try that.
Yeah, absolutely.
And for
Father's Day, I still like to grill, but the kids can buy the pizza.
Yes.
And it's a great recommendation for babysitters.
If you and the wife maybe want to go out and have a more special dinner,
You know, you can get pizza and have those kids all happy at home as well.
Yeah.
And the freshest pizza, too.
I mean, you guys are
all about this.
This is, I mean, I'm not joking about this.
This is delicious.
This
is really, really good.
And it's unique.
It's pizza like I've never tasted pizza before being grilled.
Yeah.
Do you guys use any special type of charcoal or anything?
No, she just
bought some.
Really?
I like to stay away from the briquettes.
They don't burn as fast.
Okay.
So I like to get that hardwood clump stuff.
But, you know, like you were saying, there's plenty of different flavors.
But don't discount the wood chips on the
gas grills.
Yeah.
Could you do this?
OK, you were talking about camping and different things.
Could you do this over a wood fire?
Yeah.
The tripod, absolutely.
OK.
We have a
piece of stone that's on the grill.
So if you do that, it just helps disperse the heat a little bit.
You just don't want direct heat onto
the pizza.
God, so it doesn't
burn?
Correct.
You want to do it on indirect heat?
So
this is good for any I mean how
many different pizzas do you have like a
million?
I've never been a fan of like vegetable pizza you guys put a vegetable pizza on there I just had it
Tastes completely different than any vegetable people.
It was
a recommendation.
That's one of our gourmet delights.
And it's very popular among our guests.

This is so good.
And I'm not just saying that I've never tasted pizza with that kind of a flavor before.

I would say roughly around 15 minutes.

If you like it crispier, you know, you're going to want to leave it on there.
Some people like their pizzas a little more doughy, so low and slow is the way to go with that.
Okay.
We do have multiple crusts, so we have original crust, thin crust, and we have a gluten-free option that we did bring today for everyone to try.
We're
eating gluten-free.
Can you believe that?
That's what we're eating.

It's good for you.

And it's very healthy.

So tell me a little bit how you came up with this.
Give us a background on Papa Murphy's.
It's been such a staple in the community.
Yeah.
The brand is about 30 years old, but it started out West and there's been some stores that are 20, 25 years old around here.
Wow.
But yeah, we've been around in the community.
do a lot of fundraising in the community.
I know you do.
And definitely try to just get to know our people, get to know our guests.
And
it's not an easy gig because everybody has their own type of pizza they can do.
And you guys have found a way to make a niche that is just truly successful.
Yeah, definitely try to make it easy.
Don't have to go out and have an expensive meal or chase the kids around and keep them corralled at home.
Wow.
However, people say that once a while.
There's a lot of pizza places.
But pizza is the number one food that people want.
Hands down over sub sandwiches cheeseburgers hamburgers.
It's pizza.

I mean there's a market there, too You just like Johnny just said you kind of carved out a really cool niche that you make it as fresh as can be and yeah, take it home and boom Yeah, but if you
don't have good crust we've talked about
this.

good pizza Yeah, you put any topping in the world on top of it doesn't matter
Jesus cheese cheese cheese But even when we before we put it in the the oven room temperature is what we or is that just for the grill
just because ours is fresh dill
That's why she's talking to proof the crust up to room temperature.
So that'll help
it crisp up when you put it in the oven.

what's the other thing you're the cinnamon roll thing you got coming on?
Yep, so we actually have that on the grill right now.
That is a dessert option that we offer I like to switch it up a little bit for breakfast.
I like to have it with my coffee It's kind of a sweet and savory, but I also know the kids love it late at night.
I mean, it's a great simple treat
So it's not done yet.

And you're going to want to let your flames get down real low because you're going to want to use those hot coals just like if you're cooking anything else.

But here's the deal, though, too.
When you cook something like this, do you?
OK.
And I'm a crust guy.
You know, you gotta have the, and I like the thinner crust more than the thicker crust.
Okay.
Do you scorch it a little bit?
Do you check the crust to know when it's really done with something like this, when you're cooking it over a grill like this or over a campfire?
And the thin crust will definitely cook a lot faster.
Right.
Yep.
But always keeping on rotating it too on the grill.
Obviously you can get some of those hot spots.
Right.
Keeping rotating the crust and checking the crust off.
And I mean, peel it up a little bit.
Obviously we have the white tray that keeps it very easy to cook to give a little barrier, but.
Tell a little bit more about that stone you were talking about.
Yeah, so you can see Nikki has a stone.
So it just helps move the heat around so you don't get those hot spots.
But having a pizza stone, they're very cheap at a store.
Oh, I've never seen one of those
before.
Yeah, so
then you can put the pizza right on.
And we have the white tray that we use.
So you can see that gets a little brown on the
bottom.
So you don't put the pizza actually on the actual grates?
We do.
Not on the grates.
That's really OK.
Got it.

But
definitely helps with grilling, for sure, to keep the crust from getting.
You know,
and those stones aren't that expensive.
I mean, yeah, I'd never heard of that before.
Yeah.
And on the campfire, too, put the grill, put the stone on the great same thing.
Wow.

Jim, I'm shocked that you don't know that this isn't,
you know, one of your in your real house.
Yeah.
And I use the grill like I'll use it in the winter, too.

It's right on the deck.

But you make your own pizzas.

And you can come in and meet with somebody like my wonderful self.

I honestly give credit to the boss.

I'd have to give
credit to my kids.
My kids
actually worked for Papa Murphy's before me.
They started when they were 14.
And I used to stop and visit them just to get pizza and to get that employee discount that they had.
And it was great.
Well, she's very honest.
I met the boss and the owners and we kind of hit it off right away personality and work wise.
And I just kind of dug right in.
I learned about pizza dough and I learned about, you know, yeast and all the
baking kind of metrics, and I just ran with it since then.
Danny, how is it the employee basic?
If I'm a good employee,
that's always the challenge, right?
We're very lucky to have awesome people that work with us.
That's the key.
We've had managers that have worked with us for 15, 16 years.
We have new
people that have new high school kids.
They
graduate eventually, but yeah, we have a good mix of veterans and new kids that...
That's
awesome.
It's their
first job of their junior senior in high school and
get to make some money.
I don't want to gloss over it.
You do a lot of charity work for the community.
I mean, your name's on a lot of things.
You're helping high schools, booster clubs, all that kind of stuff.
And with that, we're

And that was because that.
I still think smells conjure up memories better than anything.
And the smell of you guys roasting that pizza out there brought me back to those memories.
Just that smell is awesome with that crust.

I mean, that's a whole nother smell.

Yeah, and I'll tell you what with you guys though to people When they when they buy your pizza they take it home and they cook it anywhere they want Okay, and we've all been to pizza places where it's like that crust wasn't done well enough or that crust was too well done and you know what?
That's the best part about doing it.
Absolutely.

how you want to do

I would just recommend to people like 15 to 18 minutes on the tray.
If you want a little crispier, it'll easily slide off there for another two minutes.
And that's how you can kind of dial in your crispiness.
I'm, I'm, I always kind of look at the bottom when I get a pizza.
Cause I want to see a little bit of that scorchedness.
Color is flavor.
That's the tasty part.
And that's the thing is okay.
So Jim was talking, he wants to try that, but you want to do what?

Oh, I have a gas grill.
So I'm going to put in wood chips.
I've
never heard of that.

that's the way we do smoked chicken, right?

Might be in Minnesota, it might be in Iowa, it might be in Illinois,
and she might
be in Wisconsin.
And I said, okay, we had the day open, they're like, good, I'll call you in a week.
They call back, they're like, hey, good news, they planned it, it's in Wisconsin.
at Oneida Bingo and Casino.
And I'm like, okay, well, that's fine, which was great.
And we had about five, 600 people at this thing.
We do the show and I get off the stage and the person stops me and they're like, hey, do you guys travel?
And I'm like, yeah, where are we going?
Like Croco
or whatever,
you know?
And they said, no, a little further than that, you give me your phone number.
I'm gonna text you.
There's a committee.
You tell them what.
They tell you, I'll tell you what they tell me will make this happen.
Here, it was the national president of the American Legion.
They flew us out to Charlotte, North Carolina, the whole group, and we performed for all of them there in Charlotte.
So we had the entertainment for the National Convention.

What's the
secret of getting this crust so good?
Actually, we go on every day early morning.
We make it fresh.
But then with
the grilling part, give us some secrets on grilling it so you don't burn it or so it's not too raw.
Sure.
I like to proof my crust.
So a lot of times you're going to leave your pizza in the refrigerator to keep your toppings all nice and fresh.
But you're going to want to pull that out and let it actually come to room temperature for about an hour.
And then you're going to want to put it into the oven or onto the grill.
It has a different flavor.
Doesn't it, Jim?
Yeah, absolutely.
I've never
had smoked pizza.
And I
love your pizza.
Excellent.
The charcoal really does make a big difference.
I've heard people are getting more creative with their smokers.
But I'm a little old fashioned.
I like to sit out in my lawn chair, enjoy a drink, and grill out.
But you put that even on,
I have gas grill, but you put those wood chips in there.
That gives it that smoke
flavor.
So I'm going to try that.
Yeah, absolutely.
And for
Father's Day, I still like to grill, but the kids can buy the pizza.
Yes.
And it's a great recommendation for babysitters.
If you and the wife maybe want to go out and have a more special dinner,
You know, you can get pizza and have those kids all happy at home as well.

And the freshest pizza, too.
I mean, you guys are
all about this.
This is, I mean, I'm not joking about this.
This is delicious.
This
is really, really good.
And it's unique.
It's pizza like I've never tasted pizza before being grilled.

Do you guys use any special type of charcoal or anything?
No, she just
bought some.

I like to stay away from the briquettes.
They don't burn as fast.
Okay.
So I like to get that hardwood clump stuff.
But, you know, like you were saying, there's plenty of different flavors.
But don't discount the wood chips on the
gas grills.

Could you do this over a wood fire?
Yeah.
The tripod, absolutely.

We have a
piece of stone that's on the grill.
So if you do that, it just helps disperse the heat a little bit.
You just don't want direct heat onto
the pizza.

You want to do it on indirect heat?
So
this is good for any I mean how
many different pizzas do you have like a
million?
I've never been a fan of like vegetable pizza you guys put a vegetable pizza on there I just had it
Tastes completely different than any vegetable people.
It was
a recommendation.
That's one of our gourmet delights.
And it's very popular among our guests.

We do have multiple crusts, so we have original crust, thin crust, and we have a gluten-free option that we did bring today for everyone to try.

Give us a background on Papa Murphy's.
It's been such a staple in the community.

The brand is about 30 years old, but it started out West and there's been some stores that are 20, 25 years old around here.

But yeah, we've been around in the community.
do a lot of fundraising in the community.
I know you do.
And definitely try to just get to know our people, get to know our guests.
And
it's not an easy gig because everybody has their own type of pizza they can do.
And you guys have found a way to make a niche that is just truly successful.
Yeah, definitely try to make it easy.
Don't have to go out and have an expensive meal or chase the kids around and keep them corralled at home.
Wow.
However, people say that once a while.
There's a lot of pizza places.
But pizza is the number one food that people want.
Hands down over sub sandwiches cheeseburgers hamburgers.
It's pizza.

I mean there's a market there, too You just like Johnny just said you kind of carved out a really cool niche that you make it as fresh as can be and yeah, take it home and boom Yeah, but if you
don't have good crust we've talked about

Yep, so we actually have that on the grill right now.
That is a dessert option that we offer I like to switch it up a little bit for breakfast.
I like to have it with my coffee It's kind of a sweet and savory, but I also know the kids love it late at night.
I mean, it's a great simple treat

Do you check the crust to know when it's really done with something like this, when you're cooking it over a grill like this or over a campfire?
And the thin crust will definitely cook a lot faster.

But always keeping on rotating it too on the grill.
Obviously you can get some of those hot spots.

Keeping rotating the crust and checking the crust off.
And I mean, peel it up a little bit.
Obviously we have the white tray that keeps it very easy to cook to give a little barrier, but.
Tell a little bit more about that stone you were talking about.
Yeah, so you can see Nikki has a stone.
So it just helps move the heat around so you don't get those hot spots.
But having a pizza stone, they're very cheap at a store.
Oh, I've never seen one of those
before.
Yeah, so
then you can put the pizza right on.
And we have the white tray that we use.
So you can see that gets a little brown on the
bottom.
So you don't put the pizza actually on the actual grates?
We do.
Not on the grates.
That's really OK.

definitely helps with grilling, for sure, to keep the crust from getting.
You know,
and those stones aren't that expensive.
I mean, yeah, I'd never heard of that before.

And on the campfire, too, put the grill, put the stone on the great same thing.

Well, she's very honest.
I met the boss and the owners and we kind of hit it off right away personality and work wise.
And I just kind of dug right in.
I learned about pizza dough and I learned about, you know, yeast and all the
baking kind of metrics, and I just ran with it since then.
Danny, how is it the employee basic?
If I'm a good employee,
that's always the challenge, right?
We're very lucky to have awesome people that work with us.
That's the key.
We've had managers that have worked with us for 15, 16 years.
We have new
people that have new high school kids.
They
graduate eventually, but yeah, we have a good mix of veterans and new kids that...

awesome.
It's their
first job of their junior senior in high school and
get to make some money.
I don't want to gloss over it.
You do a lot of charity work for the community.
I mean, your name's on a lot of things.
You're helping high schools, booster clubs, all that kind of stuff.

That's the best part about doing it.

I would just recommend to people like 15 to 18 minutes on the tray.
If you want a little crispier, it'll easily slide off there for another two minutes.
And that's how you can kind of dial in your crispiness.

Cause I want to see a little bit of that scorchedness.
Color is flavor.
That's the tasty part.

Might be in Minnesota, it might be in Iowa, it might be in Illinois,

And I said, okay, we had the day open, they're like, good, I'll call you in a week.
They call back, they're like, hey, good news, they planned it, it's in Wisconsin.
at Oneida Bingo and Casino.
And I'm like, okay, well, that's fine, which was great.
And we had about five, 600 people at this thing.
We do the show and I get off the stage and the person stops me and they're like, hey, do you guys travel?
And I'm like, yeah, where are we going?

And they said, no, a little further than that, you give me your phone number.

There's a committee.
You tell them what.

They flew us out to Charlotte, North Carolina, the whole group, and we performed for all of them there in Charlotte.
