Have you been into pizza before or is this your first foray into the pizza arts?
I mean, we've both been in the food and into food our whole lives.
So, you know, it's been around us our whole lives.

And you just said pizza, let's start a restaurant over there because you're in the old
Falbo's location and that's right next to the UPS store.
So it's very central.
Do you deliver a downtown then?
Yes, we do.

Well, now what kind of pizza do you guys offer?
We offer Chicago deep dish, thick crust and crust, both of our thick and thinner, like Detroit
style.
Yeah.
Cheese and toppings all the way to the edge.
What's Detroit style?
What does that mean?
You get the crispy cheese on the outside and you have toppings going all the way to
the edge.
So, I mean, you get meal all the way.
So Detroit pizza is like to the edge?
Oh, yeah.
Oh, and a little crispy on the edge, right?

Well, what defines Chicago style?
The thickness of the crust?
It is a thick crust, but it's got toppings and cheese underneath the sauce.

The recipe for the sauce is 100 years old and comes from a grandparent, right?

Oh, my dad's side.
So, it'd be my great grandpa.

It's just amazing that you're using a recipe from your great, from your grandfather or
your great grandfather from 100 years ago.

Italy.

It's a hundred year recipe that comes over from Italy.

What about the crust?
Because your guys' crust, it's, it, it, it, it's really good.
I haven't had the thin crust yet.
I've had the deep dish.
I've, I've had the, uh, uh, the thick crust and there, it's just a good consistency and
there's a twang of sweetness in the crust that complements the sauce, I think.
Yeah.
You got to have a buttery, sweet crust.

Is butter the secret ingredient?

We tried to put only the good things on it.
So you don't have much choices.
A lot of these places they put too much on it.
So it's just a menu of favorites.

It makes it easy for the customers to come in because I don't want to sit there and
argue with myself what kind of sauce I'm going to get or something like that.
